Virginia Biscuits and Gravy

This morning, I watched my husband walking back from where-ever he had walked to and noticed that this guy IS looking pretty skinny. We had to run to the grocery store this morning to pick up root beer for dinner tonight and supplies for the next few days. The sucky thing about RV living is that the fridges are really small and you can't stock up on anything! So, we are at the grocery store and Bob says, "Let's go home and have bacon and eggs." Great, now I'm hungry, too. Hadn't really thought about it until that point because usually we don't eat breakfast...I usually just have coffee and Bob usually goes to his buddy's house to work on cabinets. I started to ask him if he wanted to go to our favorite breakfast restaurant here in town, Omelets & More for their Virginia Biscuits & Gravy and thought "NO!" I can make these better at home! We bought a pound of breakfast sausage at the meat counter for $3.99 per pound. I shaped 2 patties with half of it....

The can of 8 buttermilk bisuits was $1.50, so this saved some time and I really don't care to make biscuits from scratch in the morning...that would be more for the evening time for me...


I crumbled the rest of the sausage around the patties in the skillet...no sense in doing them one at a time, you need both for this recipe.



Cook over medium heat and just let it hang out and get brown like sausage will do if you leave it alone!


When both are browned and cooked thoroughly, remove from skillet...







And add fat-free half and half (I know it's sick, I thought I'd cut out some fat and got fat-free instead, and YUCK!...ok, for cooking with, sucks in coffee) and to cut the cheap taste of the fat-free half and half, I added 2 tablespoons of heavy cream along with 2 tablespoons of butter, summer savory and poultry seasoning (just tiny pinches of each) and 1 teaspoon garlic powder with 1/2 teaspoon red pepper flakes...now imagine this made with regular half & half and heavy cream...mmmm...now is the time to add in Wondra gravy flour until it's the consistency you like and the crumbled sausage...






In my only other skillet, Bob had the idea to use non-stick canola cooking spray (silly me, I was going to use olive oil) to cook the eggs....I used 3 large brown eggs....




And very liberally peppered them with a skosh of salt.











Flipped them over (made a mess) and Bob wanted over-easy. Me, they have to be cooked through...




This is Bob's plate...like I said, he's looking skinny lately, so I don't feel guilty feeding him all of this..
Anyhow, split the biscuits, put the sausage on top...















Eggs on top of sausage...









God, if I were pigging out like that, I'd hide my face, too!!!











And smother the whole works in the sausage gravy....Virginia Biscuits & Gravy...













I can't eat as much as Bob and I love mine smothered in Frank's Red Hot...I've tried other hot sauces and I keep coming back to Frank's!





IT'S GRUBBIN'!!!
